Brought home 10Kg blood plums.
Will choof off to office to get grapecrusher, yeast, pectinase, sulphite, DAP etc.
Planning on soaking the fruit in water = sod metabisulphite, drain & rinse, halve, pass through crusher, add pectinase, yeast & nutrient. should get about a 20+ litres of pulp/juice.
Will report back later. |

Yesterday added the last kilo of sugar (as a thick syrup)
Next weekend, rack it into glass, pitch a couple 5g pckets of EC 1118--the BDX has given it good flavor and, hopefully, lived up to the part of its spec that says "prevents cooked jam flavor" and the EC1118 will finish fermenting the fruit and added sugar.
Haven't tasted or taken any SG readings but it smells powerfully of plums, good strong aroma containing no off-smells at all. Very hopeful so far!
That leaves just one stage to go! |
